Try insect-based food if you dare!
Acceptance of insects as food is low in the West due to sensory appeal, unfamiliarity, low availability, high price and poor image. However, it could increase if the visibility of insects decreases, if products are appealing and if consumers are familiar with the food product. At the Food Science and Technology Group we are trying different ways to include insects in common food products to increase palatability and consumer acceptance.
